Now that I can Order Cheesecake Online, I’m pretty much in seventh heaven. It’s a comfort food for myself and my whole family. My friends and neighbors also. Sitting at my wooden kitchen table, I will eat a little slice, and it’s enough to bring back memories of needful and meaningful talks, of solving some problems and talking the others away. Memories of celebrating and of course there were on occasion the bad times and tears. The first cheesecake I ever made, was in my Nana’s kitchen. It was my Papa though, who taught me how to make a perfect rich, but simple cheesecake. Complete with the taste and texture of the first bite, being one of those cheesecakes that you will not forget. Cheesecake loves will know what I mean. There are quite a few variety’s I’ve had that have had that, ” Yep, this is keeper in my book.” I don’t know if I think it is so good because of the fact, Papa taught me how to use the ingredients and I am just partial. OR, it indeed is a great tasting cheesecake. It has worked it’s magic around a few kitchen tables though and never failed being there when needed, considering this is the only kind of cheese cake I will make. The rest I gladly buy. And there are great savings and deals also! I love sending away for a cheesecake another person has made. It’s an art, making “the” cheesecake, as far as I am concerned. When I first found out I can get cheesecake just by staying home and surfing the net for them, I was in awe. I’ve got a bucket list, just of various types of cheesecake I want to try, and who sells them. It’s a long one!

I have finally found a place where I can buy chocolate for any occasion and it’s made me a very happy person. Sometimes it’s hard to please everyone in my family, since their favorite chocolates are all different. And I have a big family. One year, I decided to write a list of everyone’s favorite flavor in chocolates. I must admit I had a very impressive list. Over the last few years, for various occasions and holidays, I just buy chocolate. My family are all chocolate lovers, sometimes I think more so than most. My mom loves chocolate covered cherries, for Christmas. My sisters and brothers are into everything from hazelnut, to milk chocolate. It is the same with my kids. My oldest daughter as well as myself, love mint chocolate. My oldest son, peanut butter chocolate, youngest daughter and son, dark and mild chocolate, respectively. This Easter, will be as easy as each over the last five years. I used to fill baskets with that grass (the kind that even at Christmas, despite of daily sweeping, for some reason a piece of the stuff is still around.) I put various candy in the basket, eggs and of course the big chocolate bunnies. As I said, it is easy now. They just want a basket filled with their favorite chocolate, and I now have the list memorized.

Mind you, I’m not much into discussing politics or religion. But when it comes to Fat Tuesday even though I don’t exactly know what it means, I know my husband will go to the best bakery in town and get dozens of Punchkis. To me, they are diabetes waiting to happen. That or a hypoglycemic coma waiting to strike. These (never ever call them doughnuts or jelly rolls) Punchkis are filled with jelly of every flavor. My husband got the mixed assortments and there was apricot, strawberry, cherry, lemon, apple and blueberry filling. Also there was vanilla cream, chocolate cream and custard fillings. I myself never ever eat much sugar. But the thought of a custard Punchki was tempting. Way too tempting. I got half of this sucker down and my teeth hurt from the sweetness of not only the glaze and sugar that covered the darn thing, but also the dough and the custard. I have to admit I loved the custard filling, but gave the other half to one of my boys. OMG… I no doubt gained at least three lbs, my doctor will no doubt give me hell for my glucose levels and I did have a stomach within ten minutes of eating just that half of the Punchki. I gave up worrying about my husband and his health on Fat Tuesday and other holidays. Heck, even in between holidays with his intake of sugar things. He doesn’t see the doctor often even though I beg him to, so…what else can I say? Happy Fat Tuesday, All!!

Thanksgiving isn’t going to be a big deal like it has been every other year and it makes me rather sad. I love the preparing and cooking for two days to have it all over with in about 45 min. tops, even though I used to complain about it a bit. My kids are growing up and it’s hit me full force. The oldest will be going to her husband’s family’s. My oldest son is going up North with his best buddy and my youngest son is going to his girlfriend’s aunt’s house. That leaves my youngest daughter, my husband and myself, since my mom will be going to my sisters. It’s too far for us to drive there unless we rented a hotel. So, I’m wondering if I should even cook this year.

To me, Thanksgiving is special. It’s not about the food, since I cook for three days and it’s all over in 32 minutes…yes, once I did indeed time it. Thanksgiving is a day that I can think back while my family is at the table and remember all of the things I have to be thankful for, despite of the rough times. This year, like last year, my youngest daughter will be saying the Thanksgiving prayer, and it means a lot to me. So, I’m doing my shopping and planning, but also remembering the little things I’m thankful for, while I’m getting my supplies.

Squash is one of my food basics all year round. In the winter and spring it’s rather expensive, but my since my mom had turned me on to all kinds of various types, of squash since I was young and even still is doing this, I LOVE any variety and there are so many recipes and ways to cook it! Heck, I have even eaten raw squash and it was awesome! Just add salt and wella! I just wish I could remember which kind it was that she got me to try the last time I went home. I have saved the seeds from the different kinds of quash I’ve bought, or grown, so in the spring I plan on having a squash garden. I’ve discovered not to buy any that have been refrigerated and not to refrigerate anything fresh if I want to try and grow the food. The seeds won’t take. I remembered the name… it’s delacota squash. Not sure it that is spelled right, though. At least that is how it is pronounced. Eccelent!
